
Baked sweet potato fries are a healthy alternative to regular french fries.
Basically, I take a sweet potato, wash it, cut it in half, then cut it into fry-sized pieces. Preheat the oven to about 350. If you’re using the non-stick spray: apply to the bottom of your cookie sheet or stone. If you’re not using the spray, I like to put them all in a zip-lock bag along with a little olive oil or coconut oil. Since coconut oil is a solid at room temperature, I heat it up a little, then pour it in the bag. I love garlic, so I also add minced garlic to the bag and get the fries nicely coated. Then I put them on the sheet and season with sea salt, paprika, or any other seasoning.
Place the fries in the oven for about 15 minutes. After 15 minutes, turn them over and bake them for another 15 minutes. You may feel the need to add more seasoning at intermission.
